A lovely way to make dowels, just whittle a point on the end of a square strip of your chosen timber slightly bigger than the finished size required, then use a mallet to tap it through progressively smaller holes until you arrive at the size you need.
The holes in the hardened steel plate are tapered to give a clearance angle behind the cutting edge. The plate can either be clamped for occasional use or set into a benchtop with clearance below.
