The Narex Carving Knife - Notch Cutting is a purpose-made knife for notch carving, also known as chip carving or by its German name kerbschnitt, the decorative technique of cutting small geometric facets into a flat surface.
The blade is ground with three separate single bevels along its cutting edges, matched by a relief grind on the reverse face that keeps the knife easy to maintain and resharpen without disturbing the cutting geometry. The handle has a radiused butt end so it can be nestled into the palm, letting you work equally well from the point or the heel of the blade depending on the angle of cut needed.
Because notch carving relies on consistent, repeatable cuts to keep a pattern symmetrical, careful layout before cutting matters as much as the knife itself, and a blade ground specifically for the technique makes it far easier to hold a clean line through each facet.
